Ingredients for Halloween
Pumpkin Cheesecake Bars;
1-package (16 ounce) pound cake mix
2-tablespoons butter, melted
4-teaspoons pumpkin pie spice
1-(8 ounce) package cream cheese, softened
1-(14 ounce) can sweetened condensed milk, or 1-1/4 cup homemade recipe included.
1-(16 ounce) can pumpkin, about 2-cups
1-cup chopped pecans or walnuts
How to prepare Halloween Pumpkin Cheesecake Bars;
Preheat oven to 350 degrees.
Step 1...Now in a large mixing bowl, on low speed with an electric mixer,
combine the pound cake mix, 1 of the eggs, butter, and 2-teaspoons
of the pumpkin pie spice, blend until crumbly.
Press this mixture into the bottom of a 15x10 inch jellyroll pan.
Step 2...In the same large mixing bowl, with an electric mixer, beat the cream cheese until light and fluffy.
Gradually beat in the sweetened condensed milk, then the two remaining
eggs, along with the 2 cups pumpkin, salt and the rest of the pumpkin pie spice.
Mix this well.
Step 3...Pour over the crust you just pressed into the jellyroll pan, and sprinkle
with the chopped pecans or walnuts.
Bake in the 350 degree oven, for 30 to 40 minutes or until set, do a toothpick test to check for doneness.
Cool to room temperature, then chill and cut into bars.(Chilling helps in cutting the bars evenly)
Store covered in the refrigerator.
Should make about 48 Halloween Pumpkin Cheesecake Bars.
Homemake Sweetened Condensed Milk Recipe
Things You'll Need:
1- cup instant nonfat dry milk
2- cups white granulated sugar
1/2- cup boiling water
3- tablespoons butter
Combine all ingredients in blender.
Process until smooth.
Makes 1-1/4 cups or the equivalent of one(14 ounce) can store bought
sweetened condensed milk.
Can be used in any recipe calling for sweetened condensed milk.
Store in refrigerator and use within 3 weeks.
