Dinner for the Family
Ham and Swiss Cheese Topped Potatoes
Dinner express, meat, potatoes and vegetables all in one for your family.
3-medium baking potatoes
2-cups skim milk
1-tablespoon Dijon mustard
1/4-teaspoon ground black pepper
1/2-cup shredded reduced fat Swiss cheese (2-ounces)
1-cup cut up fully cooked extra lean ham (about 6 ounces)
1-package (10-ounces) frozen asparagus cuts, thawed and drained (or green beans or peas)
Step 1...Heat oven to 375 degrees. Pierce potatoes with a fork one or two times and bake about 1 hour or until tender.
Step 2...Mix the 2 tablespoons cornstarch and skim milk in a 2-quart nonstick saucepan. Cook over medium heat, stirring constantly, until mixture thickens and boils. Stir in Dijon mustard, black pepper and Swiss cheese. Cook, Stirring constantly, until cheese is melted.
Step 3...Stir in ham and aparagus; heat through.
Step 4...To serve, cut potato in lengthwise in half and serve sauce over potato halves.
To microwave; Pierce potatoes..then;
Arrange about 2-inches apart in a circle in microwave oven. Cook uncovered on high for 10 to 13 minutes or until tender. Let potatoes stand for 5 minutes.
Decrease milk to 1-3/4-cups. Mix cornstarch and milk in a 2-quart microwavable casserole dish and cook uncovered on high 4 to 6 minutes, stirring every minute, until thickened. Stir in mustard, pepper and cheese until cheese is melted. Stir in ham and aparagus.
Microwave uncovered on high for 4 to 6 minutes or until heated through. Cut potatoes in half lengthwise and serve sauce over potates.
