1 tbsp. olive oil

1 large onion, chopped

1 large green pepper, chopped

1 can diced tomatoes

1/2 tsp. onion salt

1/8 tsp. garlic powder

3/4 tsp. chili powder

2 cups cooked beef, chopped

Let's Cook

Measure the olive oil into a 10-inch stainless steel frying pan.

Chop the onion and the green pepper, and place them into the frying pan. Cook over a low heat until they become soft, yet a little crisp.

Stir in the chopped cooked beef. This cooked beef is a planned leftover from a pot roast that I cooked the day before.

Cook the rice according to the directions on the package.

Let the beef and vegetable mixture simmer on low heat while the rice cooks.

Place one tortilla on a plate, cover with a paper towel, and place it in the microwave for about 20 seconds. If using sour cream, then spread a little on top of the cheese. Fold the sides in, over the ends of the filling, and then fold the edge of the tortilla (closest to you), over the burrito filling, and roll tightly.

If you are planning to hold and eat your burrito, then it will need to be wrapped in foil to hold it together. Otherwise, wrap them as tightly as possible, and they can be eaten using a knife and fork. Another option is to layer the ingredients in individual bowls for serving.

Oh these sound good! Since I acquired an adult allergy to beans it seems I run across more and more of these yummy recipes. May have to try it without the beans, bet it would still be tasty.
