Healthy Chicken Casserole Recipe

Low Calorie Chicken Casserole


If you are watching your calories, sometimes it is hard to find recipes that will keep the pounds off but is still desirable enough that your family won't complain when you serve it to them!  This healthy chicken casserole is one of those recipes.  Anything that is normally calorie dense is replaced with a healthier lower calorie alternative.

Ingredients:

4 cups skinless, boneless chicken breast, cooked and cut into small pieces
4 teaspoons onion flakes
1 teaspoons black pepper
2 teaspoons fresh garlic, minced
1 cup Campbell's Healthy Request Cream of Chicken Soup
1 cup frozen artichoke hearts
2 cups cooked long-grain brown rice
6 ½ ounces grated reduced fat cheddar cheese

Preparation:

Start out by turning on your oven and preheat it to 350 degrees F.

Stir together all the spices and soup into a large mixing bowl.

Add in your cooked brown rice, artichoke hearts and chicken and continue to mix them together.

Take a baking dish and spray it with a light vegetable oil to prevent sticking then place the mixture evenly on the baking dish.

Sprinkle the grated cheese on top of the mixture and bake for 30-35 minutes.
