Chicken Salad Lettuce Roll Ups

This lettuce wrap recipe is a great low calorie, moderately low carb recipe for anybody who is watching their diet. You can reduce the carbohydrates in this recipe by replacing the dried fruit with more diced up vegetables such as green peppers.


* 250g cooked skinless chicken breast cubed
* 2 Tablespoons Sunflower Seeds
* 2 Tablespoons Dried fruit pieces
* 1/8 cup Diced celery
* 1/3 cup Nonfat Yogurt
* Fresh Leaf Lettuce


Mix all the ingredients except lettuce together in a mixing bowl and stir until well mixed.

Take a spoon, and spread the chicken mixture onto a leaf then roll it up like you were rolling up a wrap.

Continue rolling the mixture in the lettuce leafs until the all of the mixture is used up.

This recipe makes two servings.
