Choose to Eat healthy with Kangaroo meat, this is a great choice of food. Kangaroo meat is ideal because it is lean with little fat therefore a good choice for diabetics. If you have never tasted Kangaroo then now is the time to give it a try especially if you want to eat a low fat healthy choice of meat.

First I want to tell you something about these animals. Kangaroos are a beautiful marsupial and make great pets if reared from a baby. Although like any animal it can be unpredictable and turn on the owner without warning.

Kangaroos are territorial and will fight vigorously to stay top of their pack, often against the younger male trying to take over. They fight by standing tall on their back legs and hit out with their front legs. They cause more damage when kicking out with their powerful back legs using their tail to balance on.

Kangaroos in Australia

Kangaroos are a pest in some parts of Australia. They break the fences and destroy some crops on the farms. Apart from that they have caused fatal accidents on the roads. This often happens when a driver sees the kangaroo at the last minute and tries to avoid hitting it, instead it causes the driver to swerve, lose control and have an accident.

If you have driven on Australian country roads you will see dead kangaroos on the sides of the road in different processes of decomposition. Eagles, Crows, foxes and other animals risk their own lives chasing the tasty morsel of food from these carcases.

The kangaroos do untold damage to vehicles when hit by a kangaroo. On an upside, I suppose it keeps the panel beaters in employment. I have often noticed vehicles with a large dent in the bonnet of a car and assumed it had been damaged by a kangaroo. I have heard of a smaller one going through the windscreen and actually landing on the passengers lap.

Facts for cooking Kangaroo Meat

Kangaroo meat is very lean all though it can be dry when cooked so it needs to be cooked diferently.

  • Kangaroo meat has virtually no fat at all, and is therefore a more healthy meat choice to eat. Because of this it is more important to prevent the meat from drying out and there are things you can do to prevent this.
  • When cooking steaks, soak in oil for 10 minutes then place in hot pan and sear on both sides to keep the moisture in.
  • When cooking any kangaroo meat limit the cooking time.
  • Do not cook it right through, I suggest you serve it medium rare, leaving longer could make it tough.
  • When roasting cook in a sealed oven bag to keep the moisture in.

Recipes for cooking Kangaroo Meat

Game cooking

Having lived in the bush on and off for a few years we have learned to kill, clean and cook a variety of wild game. This includes Kangaroos, Goats, Emus, and Rabbits.

I still remember when we got married my husband took me up to the farm and being thoughtful he had caught, killed, cleaned and skinned a rabbit ready for our dinner. When I took his coffee out to him on the tractor he handed me this rabbit and said all you have to do is cut off its head and cook it okay. Yeah no worries I replied, or so I thought.

The rabbit’s eyes were watching me as I picked up the knife. Yes, I tried, but no way could I cut his head off. Oh I know he was dead and would not feel it but I just could not do it.

My husband laughed and called me a softie. He did the job and yes I cooked it, but it did not taste the same for me, as when you haven't seen the animal that you are eating.

Note: I have not shown quantities for these recipes as it will vary for each family. Use same quantity as you would use to cook any other meats.

Roasted Kangaroo Leg

As kangaroo meat dries out I prefer to cook a kangaroo leg in an oven bag. Prepare vegetables as for your normal roast lamb. Place small quantity of flour in oven bag add some oil, potatoes, carrots, pumpkin, onions and any vegetables that you would normally cook with a roast. Add the Kangaroo leg, add spices then seal bag up and place in the oven. Pierce a couple of holes to allow steam to escape.

If you prefer, you can brown the leg in pan before placing in oven bag. Cook at 200 degree Celsius. Serve with a green vegetable of your choice.
Note: I haven't cooked this for a while, but have caught friends out in the past by saying that it was roast lamb and they honestly did not know the difference.

 

Kangaroo Tail Soup or Stew

Cut Kangaroo tail into joints, place in pot and add vegetables of choice, barley, hot sauce, and other seasonings. Cook the same as beef soup, and thicken if required when cooked.

Cut the vegetables up small when cooking soup. If cooking Stew use larger portions of vegetables and leave out the barley.

Kangaroo Meat Patties

Ingredients

  • Use quantities of meat same as when using mince.
  • Garlic, chilli, pepper and salt of choice, hot sauce
  • Egg to help bond ingredients together
  • finely chopped onion
  • small quantity of plain flour


Instructions
Now get your hands dirty: mix all the ingredients thoroughly then divide into normal sized patties. Fry in oil until golden brown on each side. Serve with salad or vegetables.

Or you could eat these as you would with hamburgers.

Seared Kangaroo Fillet

Potato or Kangaroo Pie

Ingredients

  • Kangaroo Mince
  • Onions, chopped fine
  • Carrots, diced or grated
  • Celery diced
  • Quantities of Potatoes
  • Diced Tomatoes
  • Pepper and salt and seasonings and hot sauce

Instructions

Cook potatoes and mash with dob of butter. Brown mince in fry pan, then add other vegetables and then when cooked thicken with flour.

Place meat into a pie dish or similar. Spread mashed potato across the top and grate cheese over the top. If you want you can slice a tomato and put over the top and then add more cheese. Cook under grill or in oven until cheese melted and brown. Serve with green vegetables.
