Homemade Healthy Strawberry Shortcake
This recipe has strawberries that burst with the flavor of a sunny summer day, and biscuits that are made from scratch, that are as fast as any mix.
Fresh strawberries give a boost of fiber and are a good source of vitamin C.

Preparation time is a mere 20 minutes.
Baking time just 12 to 15 minutes.
Ingredients the shortcakes;
1-3/4-cups all-purpose flour
2-tablespoons white granulated sugar
1-tablespoon baking powder
1/2-teaspoon grated orange peel
3-tablespoons unsalted butter, cut into pieces
3/4-cup skim milk
Ingredients for the filling;
2-pints fresh strawberries, sliced
1-tablespoon orange juice
1-tablespoon white granulated sugar
Vanilla nonfat yogurt for garnish
Preheat oven to 450 degrees. Spray a baking sheet with vegetable cooking spray.
In a large bowl, sift together the 1-3/4 all-purpose flour, 2 tablespoons white granulated sugar and 1 tablespoon baking powder. Stir in the 1/2 teaspoon grated orange peel. Using a pastry blender or 2 knives, cut the butter into the flour mixture until coarse crumbs form. Quickly stir in the skim milk until soft dough forms.
On a lightly floured surface, roll out the dough to 1/2-inch thickness. Using a
2-1/2 inch biscuit cutter, cut out the biscuits. Gather any trimmings, roll again, and cut more
biscuits. Place on the prepared baking sheet. Bake until light golden brown, should take about 12 minutes, maybe 15 minutes, depending on your oven. Place these biscuits on a wire rack to cool.
Prepare the filling, in a large bowl, combine the 2 pints strawberries, 1 tablespoon orange juice and 2 tablespoons sugar.
Split the biscuits horizontally. Place bottom the halves on a serving plates. Top with some of
the strawberry filling. Cover with the biscuit tops and spoon on the remaining strawberry filling. Garnish with the vanilla yogurt.
If you don't like or want to use yogurt, use low-fat whip topping.
This recipe works great with peaches, raspberries, blueberries, blackberries and apples.
