A creamy dish that only takes about 5 minutes of preperation time, then cooking time only about 12 minutes to make this tasty pasta side dish.
Things You Will Need
12- ounces dry fettuccine
6- tablespoons unsalted butter
2/3- cup whipping cream
1/2- teaspoon salt
1/8- white pepper
1/8- teaspoon nutmeg
1- cup fresh grated Parmesan cheese (about 3 ounces)
2- tablespoons fresh chopped parsley or 2-teaspoons dried
Sprig of fresh parsley for garnish, optional
Cook the fettuccine in a large pot of boiling salted water. Just until tender but still firm. About 6 to 8 minutes. Drain well. Return to the pot and keep warm.
Place the butter and cream in a large heavy skillet over medium-low heat. Cook and stir until butter melts and mixture bubbles. Cook and stir for 2 minutes more. Stir in salt, pepper and nutmeg. Remove from heat.
Gradually stir in the Parmesan cheese until blended and smooth. Return to heat just to be sure cheese is blended well, don't let the sauce bubble again, or the Parmesan will get lumpy and tough.
Pour the sauce over the pasta in the pot. Stir and toss over low heat until sauce has thickened and pasta is coated. Only about 2 or 3 minutes. Place the fettuccine on a serving platter and sprinkle with parsley. Garnish with parsley sprig if you'd like.
