How To Make Coca Cola Chicken

Aside from the eggplant, chicken is probably one of the most diverse foods to cook with. Believe it or not it combines wonderfully with the most popular cola in the world: Coca Cola. This dish is quick and simple to prepare and tastes delicious. It is also a great conversation piece dish to serve to dinner guests.

Things You Will Need

Large Pyrex dish

Salt and pepper

One package of dry onion soup mix

3-4 large Idaho potatoes or 6-8 Yukon Gold potatoes

1 chicken cut into eights or 4 legs and 4 thighs.

Coca Cola

1 small onion (optional)

Step 1

This is a very easy recipe and only takes about 10-15 minutes to prepare, depending on how fast you can peel potatoes. Feel free to play with it according to your taste. There are no set amounts. If you want to cook more, just add more potatoes and chicken. And of course, more Coca Cola.

The first step is to peel and cut the potatoes. Then layer them at the bottom of the Pyrex dish. Either Idaho or Yukon Gold will do-each adds its own particular taste and consistency after they are cooked. Idaho will usually be a little starchier if that's what you like. Both taste great when cooked in the Coca Cola. Small square pieces are the best-they soak up the liquid and its color beautifully.

Step 2

Next slice the onion if you want it and layer it with the potatoes. The onion caramelizes wonderfully during the cooking and adds a little extra taste and a different consistency to the potatoes.

Layer the chicken on top of the potatoes. Lightly salt and pepper all the ingredients if you want. It is ok to skip this step if you want. Then take the dry onion soup mix and liberally sprinkle it over the chicken and potatoes. Feel free to mix it up a little bit and rub it on the chicken. You want the chicken and potatoes to have a nice even layer.

Step 3

The last step is pouring the Coca Cola into the Pyrex dish however what I like to do is turn the chicken over, meat side down and push the pieces down so that they are mixed in with the potatoes and not just layered on top. The amount of liquid to pour is not a set amount-you want to make sure that there is a good 1 to 1 1/2 inch layer of Coca Cola. Enough so that everything cooks in the liquid and it caramelizes everything wonderfully.

Put the chicken, uncovered, in an oven preheated to 375 degrees. After about 45 minutes turn the chicken over and feel free to baste some liquid over the meat. Cook for another 30-45 minutes according to taste. In our family we like the meat falling off the bone so we leave it in up to 90 minutes total. You want to make sure that all the liquid doesn't try up.

The taste of Coca Cola chicken is similar to the sweetness of apricot chicken, but not as over powering. The chicken pieces and potatoes have a beautiful caramel glaze, excellent texture and a subtle sweetness that is pleasing to the palate.

Coca Cola chicken can be addictive so be careful. Enjoy and bon appetite!

If you really like onions put a lot of the in the dish, they carmalize beautifully. I hope you enjoy the recipe.
