How to Make a Simple Macaroni Salad

One Simple Macaroni Salad Recipe - So Many Different Dishes

Make and enjoy this simple macaroni salad in any season. This tasty, easy to prepare, side dish complements many entrees. This classic salad is a favorite food for picnics, tailgates, covered dish dinners, family reunions, etc. Don’t forget to carry it safely, by keeping it cold. Remember the old saying:  “Keep it cold, or keep it hot, or don’t keep it at all.” I hope your family will enjoy my recipe for simple macaroni salad.

Simple Macaroni Salad

Gather the ingredients to make a simple macaroni salad:

8 oz. pasta uncooked (elbows, shells, bow ties, etc.)
pickles, chopped and some pickle juice
onion, chopped
tomato, chunked, medium
cucumber, sliced
celery, sliced
celery seed
green/red peppers, chopped
cheese, chunked, small

Let's Cook

Step 1:

Measure out the amount of pasta you will need, and cook it following the directions on the box. When the pasta is done, pour it into a colander, and rinse with cold water to cool. Then,  let the pasta set to drain completely.

Step 2:

Spoon the pasta into a large glass bowl, and add your favorite ingredients from the above list. Add salt and pepper to taste. As a binding agent, make a dressing, using four parts mayonnaise to one part pickle juice, and stir it into the pasta mixture.

Step 3:

Add ingredients according to the season or to your tastes. In summer, use tomato, cucumber, and green/red peppers, fresh from the garden. I always use celery, pickles, and onions in my salad.

The last time I made this recipe, I used chopped pickles, onion (small amount), one medium tomato - chopped (remove seeds), one medium cucumber - sliced, one chopped green pepper, and celery seed.

For a different flavor, add a small amount of crushed pineapple (well drained). Or, add in some small grapes. In the fall, add in some chopped apple.

Step 4:

Refrigerate the pasta salad until cold. It will then be ready to be served and enjoyed.

Other Yummy Pasta Salad Ideas

This pasta recipe/dish is delicious just the way it is; however, you can also use it as the foundation for many other dishes. Add meat, and it becomes an entrée:

Tuna Macaroni Salad
Depending on the amount you are making or have leftover, add one or two cans of drained water packed tuna. Stir to blend in the tuna; you may need to add more mayonnaise to bind all the ingredients together.

Ham Macaroni Salad
Stir in leftover ham that has been chopped into bite size pieces. Or, simply cut some deli ham slices into strips, and stir them in. If needed, add some extra mayonnaise when blending.

Chicken Macaroni Salad
This is a tasty way to use leftover rotisserie chicken or even leftover fried chicken. Chop the chicken into bite size pieces, and fold them into the pasta mixture. Again, you may need to add more mayonnaise. Note:  Replace the chicken with leftover holiday turkey for a different turkey meal.
