How to Harvest and Store Borage

Borage is an annual herb whose leaves and flowers are edible. The leaves have a slight cucumber taste and the flowers have a sweet honey taste. Borage is used in soups, salads, dips and beverages. The blue, star shaped flowers of Borage can be candied or used in decorating.

Things You Will Need

Borage
Garden gloves
Garden sheers
Freezer safe container
Ice cube trays

Harvest Borage in the late morning after the dew has evaporated from the leaves and flowers but before the day becomes too warm.

Choose young leaves because as Borage matures, a white, prickly fuzz develops on the stems. Harvest Borage as needed throughout the growing season.

Use Borage leaves fresh. Borage leaves lose their flavor if it is dried for storage. The flowers can be frozen though. Simply fill ice cube tray compartments half way with water and place 1 flower in each area. Place in freezer and once frozen, finish filling the tray and place back in freezer. Keep flower ice cubes in a freezer safe container.
