Leche flan is a very popular dessert in the Philippines. Many Filipinos expect this delicious dessert to be presented on the table in a simple gathering, any celebration or occasion. Filipino families like to eat this dessert every weekend and this is also one of the ingredients in another famous Filipino dessert called "halo-halo".
Leche flan is considered a wonderful dessert in the Philippines because it is simple to make at home with only a few ingredients involved. You can select whether to use a variety of mold forms that you want as the shape of your leche flan dessert.
things you'll need:
- Small aluminum mould
- Thin knife (Tooth pick is preferable for other dessert makers)
- For the Caramel Ingredients:
- 1 cup of white sugar
- 3/4 cup water For the Custard Ingredients:
- 12 egg yolks
- 2 cans (13 oz.) condensed sweetened and evaporated milk
- 1 tbsp. vanilla
Put sugar and water into the small saucepan over medium heat. Wait until the sugar will caramelized (light amber in color or like the color of honey) before pouring it into any molding container that had been sprayed with a non-stick vegetable oil or butter.
Pour the caramelized sugar into the aluminum container that you would like to use. Spread the caramel on the bottom of the container.
Combine all the custard ingredients in a large bowl. When you're mixing the custard ingredients, you need to stir it lightly in order to prevent bubbles from forming.
Slowly pour the mixture on top of the caramel on the container. Fill your selected container or containers between 1-1 1/2 inches thick. Place these containers in a bigger tray/ baking pan half-filled with water.
Preheat oven to 325 degrees. Bake it in the oven for one hour or until mixture is firm.
Check if the leche flan is already cooked by inserting a thin knife. You can also opt for a tooth pick to insert in it. If it comes out clean after removing it, then your delicious dessert is ready to be removed out from the oven.
Allow the flan to cool before separating it from the aluminum containers into a platter. Use a thin knife to separate the edges of the mould to loosen the leche flan. Place a platter on top of the mould and quickly turn upside down to release the golden brown caramel on top.
Tips & Warnings
Place this dessert inside the refrigerator when it's no longer hot. Most people prefer to serve and eat the leche flan dessert when it is cold.
Many will eat this Filipino yummy dessert just with plain water.
