How to Make Authentic key Lime Pie

True key lime pie lovers know that the real thing is not green in color. The real thing is an off-white/yellowish color. It gets this color from the egg yolks that it is made with. For best results when making an authentic key lime pie always use real key limes. Other real limes can be substituted if necessary but never use bottled lime juice. This receipt only takes a few minutes to prepare and 12 minutes to bake. So why settle for less than the real thing?


Things You Will Need

4 large or extra large egg yolks, 14 once sweetened condensed milk, 1/2 cup fresh key lime juice (approximately 12 limes), 2 teaspoons grated lime peel - green portion only, 16 crushed graham crackers, 3 tablespoons sugar, 1/4 lb butter, Whipping cream


Step 1

Mix the graham crackers, sugar and butter together and press the mix into a 9" pie plate. Bake for 10-12 minutes until lightly browned in a preheated 350F oven.


Step 2

Beat the egg yolks until thick and light yellow using an electric mixer being careful not to over mix. Next add the condensed milk and while beating on low speed add in half of the lime juice. Once the juice is mixed, add the lime peel the other half of the lime juice. Mix just a few seconds more until blended.


Step 3

Pour the mixture into the pie shell and bake at 350F for 12 minutes. When cool, use the whipping cream with a small slice of a fresh key lime as garnishment.
