Chicken croquettes are usually fried, but
this recipe will guide you on how to bake a less fat version.
Things You Will Need3-tablespoons butter
1-medium onion, finely chopped
2-tablespoons minced fresh parsley
1/2-cup all purpose flour
1/8 -teaspoon cayenne pepper
1/4-cup chicken broth
2-tablespoons low fat milk
1-1/2 cups ground-cooked chicken breast
1/3-cup plain or seasoned bread crumbs
1-large egg. lightly beaten
1/2-cup more of the bread crumbs

Step 1In a small saucepan, melt the butter. Add the onions and cook for 5 minutes or until tender. Stir in parsley.
Remove from heat, and in a small bowl, combine the flour, salt and pepper. Stir into the mixture in the sauce pan. Return to moderate heat and cook for about a minute or until bubbly. Add the chicken broth and milk. Cook, stirring constantly until mix starts to thicken, then cook and stir for 2 minutes more. Remove from heat.
Step 2Pour mixture into large bowl. Stir in the ground chicken and the 1/3-cup bread crumbs. Cover and refrigerate for 1 hour or more. Shape this mix into 8 patties about 1/4 cup each.
Step 3Preheat oven to375 degrees.
Place the egg in a shallow dish. Place the other 1/2 cup bread crumbs in another dish. Coat the patties with bread crumbs, then dip into the egg and then coat with the crumbs again. Arrange in lightly buttered baking pan. Bake for 25 to 30 minutes. While baking make the cream gravy.
Step 4Cream Gravy:
In a small sauce pan, melt 1-tablespoon butter over moderate heat. Whisk in 2-tablespoons flour, 1/2-teaspoon dried basil, 1/4-teaspoon salt, and a dash of white or black pepper. Cook, whisking all the time for 1-minute or til bubbly. Add 1 cup low-fat milk. Cook, whisk again constantly until starting to thicken, continue to cook for 2 more minutes...still whisking.
Makes 8 servings.
