In the mood for a rich Beef Marsala and Herb Stew? There are many substitutions that this dish will nicely accommodate. Try it as the main course for a dinner party that is special, this will surely impress. This recipe for Beef Marsala and Herb Stew is for eight servings. Bon Appetit!
Things that are needed:
Â· 4 tbsp.olive oil
Â· 1/2 cup crumbled crispy smoked bacon
Â· 1 1/2 cups chopped white onion
Â· 3 finely diced garlic cloves
Â· 4 tbsp. all-purpose flour
Â· 4 pounds, 1 inch cubed beef chuck
Â· 2 cups Marsala wine
Â· 4 cups beef broth
Â· Water as needed
Â· 2 cups fresh coarse chopped Roma tomatoes
Â· 1 tsp. ground dried tarragon
Â· 1/2 tsp. ground dried thyme
Â· 1/4 tsp. ground dried oregano
Â· 1/4 tsp. ground dried sage
Â· Salt and pepper to taste
Â· 1/3 cup prepared horseradish
Â· 1 cup thinly sliced carrots
Â· 2 cups diced pre-cooked Shitake mushrooms
Â· 2 cups diced Yukon Gold potatoes
Â· 1 Dutch oven
Â· 2 large mixing bowls
Add olive oil to Dutch oven, turn burner to medium-high heat. Add onions, cook until golden. Add garlic and cook 1 minute. Transfer to a large bowl.
Combine flour, salt, pepper, sage and oregano in a second large bowl. Add beef and mix well into dry ingredients.
Cook on medium-high heat, one-third of cubed beef, brown on all sides. Add browned beef to the bowl of onions and garlic. Repeat with remaining beef in two more batches, add more olive oil if necessary.
Pour Marsala wine into Dutch oven on medium heat, scrape up browned bits from the bottom.
Stir in beef broth, tomatoes, tarragon, thyme, and horseradish.
Return meat,onion, garlic and bacon to Dutch oven. Simmer on medium-low heat, half-covered for 90 minutes.
Add carrots, mushrooms and potatoes, cover and simmer until tender, about 45 minutes.
Taste test the stew. This is the time to add any needed flavors, herbs, seasonings. Add more wine or even a different type, like a red wine to heighten the flavor of your Beef Marsala and Herb Stew.
Serve warm Beef Marsala and Herb Stew over rice, noodles or with a choice of toppings: cheese, croutons, minced onions or sour cream.
* A favorite mustard can be used in place of horseradish.
