How to Make Beef and Noodles With Leftover Roast Beef
Beef and Noodles - A Great Comfort Dish
This beef and noodles dinner is a great way to stretch meat and broth leftovers from a roast to get another meal. Not only does it save money, but it also saves time since you can make this quick and easy beef and noodles recipe in a hurry. Serve your favorite salad, side dish, congealed salad, or fruit, with the beef and noodles dinner, and you have a hearty meal your family will enjoy.
Gather the ingredients to make a beef and noodles dinner.
1 Tbsp. olive oil
1 medium onion, chopped
1 medium green pepper, chopped
2 cups leftover broth
1 1/2 tsp. Worcestershire sauce
1/4 cup flour
1/2 cup sour cream
2 cups leftover meat
salt and pepper to taste
1/2 pkg. of Old Fashioned Egg Noodles, Medium Size, (16 oz. size pkg.)
Let's Cook!
Put the egg noodles on to cook, using the directions given on the back of the package.
Pour the olive oil into a 10-inch stainless steel fry pan. Add in the chopped onions and peppers. Cook over low heat until the onions are translucent.
Pour in the broth. (If you do not have enough leftover broth, you can use canned broth, or bouillon cubes dissolved in water.)
Add the Worcestershire sauce to the onions, peppers, and broth in the fry pan.
Make a thickener (flour and water) to stir into the broth mixture to thicken. Do not thicken the broth to a thick, gravy consistency.
Stir in the sour cream, and stir until well blended.
Chop up the leftover meat, and add it to the gravy mixture in the fry pan. Heat the mixture over a medium/low heat until hot.
Add salt and pepper to taste.
Pour the noodles into a colander to drain, and then add them to the gravy mixture in the fry pan. Stir until all the ingredients are well blended. Stir again, just before serving the beef and noodles.
In Closing
Before purchasing a piece of meat, think of the many ways you can use it, and think about planned leftover meals, like this beef and noodles dinner. Quite often, we can purchase a larger roast that we can get several meals from - cook once, and eat multiple meals. This is particularly helpful when we have so many things to do; yet, we do want to have a sit down dinner with the family every night. This recipe for beef and noodles is a great comfort food dish, too.
NOTE: If you don't have leftover meat from a roast, to make this beef and noodles recipe, then you could purchase a small piece of sirloin. Slice the sirloin as you would to make a stir-fry, cook it in the fry pan, add in the onions and peppers, and proceed with the recipe. Don't forget to purchase a can of broth, or use bouillon cubes to make the broth for this beef and noodles recipe.

Mmmm! This is a great way to handle leftover beef!
Buying a roast with the idea of left-overs for another dish is brilliant. I'll never buy a small roast again!
