How to Make Beef and Noodles With Leftover Roast Beef

This easy beef and noodles recipe is a great way to stretch meat and broth leftovers from a roast to get another meal. Not only does it save money but it also saves time since you can make this quick and easy recipe in a hurry. Serve your favorite salad, side dish, congealed salad, or fruit, and you will have a hearty meal your family will enjoy.

Beef and Noodles Made With Leftover Roast Beef

Gather the ingredients to make this beef and noodles recipe:

1 Tbsp. olive oil
1 medium onion, chopped
1 medium green pepper, chopped
2 cups leftover broth
1 ½ tsp. Worcestershire sauce
¼ cup flour
½ cup sour cream
2 cups leftover meat
salt and pepper to taste
½ pkg. of Old Fashioned Egg Noodles, Medium Size, (16 oz. size pkg.)

Let's Cook

Put the egg noodles on to cook using the directions given on the back of the package.

Pour the olive oil into a 10-inch stainless steel fry pan. Add in the chopped onions and peppers. Cook over low heat until the onions are translucent.

I have this Tramontina frying pan, and I use it almost daily - I love it! And since stainless steel cookware is one of the safest types of cookware that you can use, I feel good about the meals that I prepare in this pan.

Pour in the broth. (If you do not have enough leftover broth, you can use canned broth or bouillon cubes dissolved in water.)

Add the Worcestershire sauce to the onions, peppers, and broth in the frying pan.

Make a thickener (flour and water) to stir into the broth mixture to thicken. Do not thicken the broth to a thick, gravy consistency. 

Stir in the sour cream, and stir until well-blended.

Chop up the leftover roast beef, and add it to the gravy mixture in the fry pan. Heat the mixture over a medium/low heat until hot.

Add salt and pepper to taste. 

Pour the noodles into a stainless steel colander to drain, and then add them to the gravy mixture in the frying pan. Stir until all the ingredients are well-blended. Stir again just before serving.

Before purchasing any piece of meat, think of the many ways you can use it, and think about planned leftover meals like this tasty dinner dish. Quite often, we can purchase a larger roast that we can get several meals from - cook once, and eat multiple meals. This is particularly helpful when we have so many things to do; yet, we do want to have a sit down dinner with the family every night. This recipe is a great comfort food dish, too.

If you don’t have leftover meat from a roast, then you could purchase a small piece of sirloin. Slice the sirloin as you would to make a stir-fry, cook it in the fry pan, add in the onions and peppers, and proceed with the recipe. Don’t forget to purchase a can of broth, or use bouillon cubes to make the broth for this beef and noodles recipe.
