After finding the best chunky blue cheese dressing ever--in my lifetime anyway-then suddenly finding some unexpected guests at my home for drinks and snacks. Well I thought I had better whip up something pretty spectacular, quick. Blue cheese yogurt fondue really delivers. Unaware victims, trying my dubious new creation. They had no idea what hit them...sheer delight, that's what. This recipe is designed for four servings.
Preheat oven to 350 F. Thinly slice bread into 2" triangles, lightly butter and bake for 7 minutes. Set aside on a serving platter to be served with blue cheese yogurt fondue.
Add to a stovetop pan: 1 tbsp. butter, 1 tbsp. olive oil onions and garlic, sautÃ© on medium-low heat for 2 minutes.
Add flour, stir into onion and garlic mix, add heavy cream or milk, stir for about 1 minute.
Add yogurt and blue cheese dressing, stir for 1 minute on medium-low heat.
Add the cheddar cheese 1 minute before transferring to the fondue pot.
Serve with toast and perhaps some caviar to accompany with small spoons to dollop atop the toast points and fondue mix-- to surprise your guests-- with even more heightened fanciful flavors.

Â· 1 tbsp. olive oil
Â· 2 tbsp. minced onions
Â· 1 tsp. minced garlic
Â· 2 tbsp. flour
Â· 1 cup milk or heavy cream
Â· 1 tbsp. Greek yogurt
Â· 3 tbsp. blue cheese dressing
Â· 1 cup shredded cheddar cheese
Â· Italian 5 grain or sourdough bread
Add dry white wine.
Add salt, pepper or other condiments for desired flavor.
Use low fat products as substitutes.
Using a separate stovetop pan to make the recipe gives better heat control, as opposed to making the mixture in the serving fondue ware.
