Caramel Candy

To me there is no reason except pure pleasure to make candy. Making candy is as exacting as it is fun, with a some good tools and easy to follow directions anyone can make good homemade candy. No preservatives, colorings or mystery ingredients.

Lovely, classic, chewy caramel candy can be a hard task. Not to mention messy and great care needs to be taken so it doesn't scorch and burn or become granular. Using a crock pot will make this rich creamy confection a lot easier. Eat it as is, coat some apples, or dip the pieces in chocolate.



Instructions
things you'll need:

   
    1/4 cup all-purpose white flour
    1 cup dark or light brown sugar
    1 cup white corn syrup
    1 and 1/2 cups half and half
    1/2 cup butter, melted
    1/4 cup all-purpose white flour
    2 teaspoons vanilla extract
    1 cup chopped pecans, or any nuts you choose, optional
    crock pot or slow cooker

  

            Step 1...Mix the brown sugar and 1/4 cup flour thoroughly in the crock pot. Add the brown sugar, corn syrup and 1 cup of the half and half. Stir well and cover. Cook on high for 2 to 3 hours. While cooking on high, stir every 30 minutes.
         

           Step 2... Make a smooth paste with the melted butter and 1/4 cup flour. Gradually add 1/2 cup half and half. Stir this mixture into the crock pot mixture. Turn on low and cook for 8 to 10 hours. If it does not thicken, turn on high and cook until it coats a spoon. Add the vanilla and chopped pecans, if using. Again, if you need to raise the temperature to thicken stir every 30 minutes.
         

            Step 3...Pour onto buttered cookie sheet, about 1/2 in deep. Mark into squares and let stand to cool completely. Cut with knife or kitchen shears and wrap each piece in food wrap.
