How to Make Cheese Soup
Cheese soup is a wonderful winter comfort food. After all the chopping of the vegetables it's a very easy soup to put together and makes a nice side dish to any meal. It can also be a stand alone meal along with a salad and some good Italian bread. If you are a fan of cheese this is the soup for you.
Things You Will Need
Ingredients for Cheese Soup
1. 1/2 cup grated carrots
2. 1/2 cup finely chopped celery
3. 1 cup water
4. 2 tablespoons chopped onion
5. 1/4 cup butter
6. 2 cups milk
7. 6 tablespoons flour
8. 2 cups chicken broth
9. 1/2 pound sharp cheddar
Step 1
In a small sauce pan add 1 cup water and the carrots and celery. Cook until they are soft. In a large soup pot add the butter and onion and cook until soft. Cook the onions slowly so as not to brown them, stirring frequently. Add the mik and chicken broth after the onions are soft. Stir in the flour using a whisk to prevent lumps from forming. Cube the cheese and add to the soup pot. Stir until the cheese melts. Add the celery and carrots and you soup is done.Once you get all the chopping of the vegetables done, which you should do before you start to make the soup, it comes together quite easily and quickly. You may tweek this soup by adding more vegetables to your liking and also cubed ham is very nice as well. If the soup is not cheesy enough just increase the amount of cheese you use. Enjoy.
