How to Make Chicken Marsala Cheese Casserole
Chicken Marsala cheese casserole has a wonderful blend of chicken, vegetables and Italian flavorings that are exquisitely enhanced by Marsala wine. A special entree for your guests, an unforgettable tasty treat. Try various cheese blends and a white wine or dry Sherry, even apple cider can substitute while experimenting with this complexity of flavors in my original Chicken Marsala Cheese Casserole recipe.
Ingredients and things needed for 4 portions:

4 cups 1" cubed chicken white or dark meat

1 cup Marsala wine

2 minced garlic cloves

2 tbsp. diced white onions

2 tbsp. chopped mushrooms

1 cup chicken broth
-
2 tbsp. flour
-
2 tbsp. olive oil
-
4 tbsp. diced Roma tomatoes
-
4 tbsp. diced raw potatoes
-
4 tbsp. diced fresh or frozen baby spinach leaves
-
2 cups shredded sharp cheddar cheese
-
1/4 tsp. ground sage
-
1/2 tsp. ground basil
-
1/4 tsp. ground oregano
-
1 tsp. ground black pepper
-
2 tsp. salt
-
Large oiled casserole dish
-
Large skillet
-
1 large resealable bag
Step 1
Add onions and garlic to olive oil and sauté for 2 minutes on medium-low heat.
Step 2
Add cubed chicken meat to a resealable bag with flour, herbs and condiments, shake well and add entire contents to the frying pan ingredients.
Step 3
Sear the chicken cubes on medium heat for 2 minutes, fry on each side.
Step 4
Add broth, mushrooms, diced potatoes and spinach to chicken sauté, cook for 3 minutes on medium-low heat.
Step 5
Add the wine and blend with all of the chicken Marsala cheese casserole ingredients for 30 seconds. Taste test and add any needed flavorings.
Step 6
Layer the oiled casserole dish with 1/3 chicken mixture, add tomatoes and 1/3 cheese. Continue this layering, top generously with shredded cheese.
Step 7
Bake in a 350 degree oven for 45 minutes. Serve chicken Marsala cheese casserole with your favorite beverage, garlic bread and salad.
