How to Make Crustless Chicken Pot Pie or Chicken Goop Over Rice
Love chicken pot pie, but no crusts in the freezer? Don't want to make your own crust, or simply want to save calories by eliminating the most fattening part? My family has been making crustless chicken pot pie for years…or as we affectionately call it, chicken goop over rice.
Just as chicken pot pie may be served as a meal or a side item, chicken goop over rice can be an entrée or a side. It certainly makes an interesting item to bring to pot luck dinners, and it works well for leftovers. Leftover Thanksgiving turkey substitutes for chicken, too.
The instructions will make 2 very large servings or 3 to 4 standard sized servings.
Things You Will Need
Rice
Veg-All (1 can, drained)
Cream of Chicken Soup (1 can)
Chicken (1 can or a half to a full cup)
Salt and PepperStep 1

Boil rice.
Step 2

Drain rice and spread onto plates or into bowls.
Step 3

Open and drain the can of Veg-All.
Step 4

Mix the cream of chicken soup, Veg-All and chicken in a boiler and add salt and pepper to taste.
Step 5

Bring the contents to a boil and pour over rice, or pour the mixture over rice and microwave to heat.
