How to Make Easy Mexican Minestrone Soup

Typically minestrone is a tomato based vegetable soup of Italian origin, made with a meat broth. For a quick and easy variation, try this tasty Mexican version. From the Old Italian word minestrare, meaning dish up, your family will be asking you to dish up this delicious Mexican Minestrone for years to come.

Mexican Minestrone

Things You Will Need

1 Can diced tomatoes with onions and green chiles
1 Small can beef broth
1 Small can chicken broth
1/2 Cup salsa
1 lb. frozen corn
3 1/4 Cups water
1 tsp. ground cumin
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. lemon pepper

Step 1

Combine the diced tomatoes, beef broth, and chicken broth in a large pot. Add the salsa. Mild or medium salsa is best.

Step 2

Pour in the water, add the corn and the remaining ingredients.

Step 3

Cover the pot and let simmer for an hour.
You could not ask for an easier, tastier dinner. Top with melted cheese and crumbled tortilla chips, and you are set to go!
