Homemade Hush Puppies

Hush Puppies Made from Scratch Hush puppies from scratch are simple and fast to prepare . Nothing goes better with a big batch of breaded and fried catfish fillets than homemade hush puppies. Living near the Green River and home of the "Catfish Festival", I've had the pleasure to try several different hush puppy recipes. I'll admit, I do prefer some to others, but everyone has their preference. Some are very heavy and dry, while others are light and flaky. I have several recipes and details on making hush puppies from scratch.

Yellow or White Cornmeal?

From my hush puppy eating experience, white cornmeal makes lighter batter than the yellow. I prefer the taste better as well. There is a restaurant here that uses yellow cornmeal and by far, theirs are the worst I've ever eaten: hard, heavy and tasteless. Not very desirable in my opinion.

Types of Onions?

 Here in Kentucky, most recipes will have white, yellow and/or green onions. I prefer a mixture of both green and white onions. Some people will also use chopped chives. I've never seen or heard of red onions in hush puppies, but there's always a first time for everything.

Green Onions in Hush Puppies

Add Flour or Not?

Adding flour is essential to reach lighter, more flaky hush puppies.  The more flour ratio to cornmeal, the lighter and more bread like it will be. However, there  always equal or less flour compared to cornmeal. 


  • Be sure to use self rising flour and cornmeal for fluffiest pups.
  • You can always add spices to taste. Common spices are salt, pepper, cayenne pepper, paprika and garlic. 


Homemade Hush Puppies

Basic Cornmeal Hush Puppies Recipe:

(The heavy ones)

  • 2 cups cornmeal
  • 1 cup milk
  • 1 egg, beaten
  • 1 small onion, diced finely
  • 1 tablespoon granulated sugar - optional

Mix together and drop by large spoonfuls into a hot deep fryer. Fry until the are golden brown on each side. Remove, drain and serve warm.

Light on Onion Hush Puppies Recipe:

  • 2 1/4 cup cornmeal
  • 3 tablespoons self rising flour
  • 1 tablespoon chopped onion
  • 1 cup milk
  • 1 egg

Mix together, drop by spoonfuls in hot oil and deep fry until golden brown.

Buttermilk Hush Puppies Recipe:

  • 1 1/2 cup cornmeal
  • 1/2 cup self rising flour
  • 1/2 teaspoon baking soda (essential when using buttermilk)
  • 1/2 teaspoon salt
  • 1 small onion chopped
  • 1 cup of buttermilk
  • 1 egg, lightly beaten


Mix the dry ingredients together. Stir in the wet ingredients. Drop by spoonfuls into hot vegetable oil. Deep fry until golden brown. Avoid putting too many in so you can rotate them and cook them evenly.


Garlic Seasoned Hush Puppies Recipe:

  • 1 1/2 cup self-rising flour
  • 1 1/2 cup cornmeal
  • 1 tablespoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon baking soda
  • black pepper to taste
  • 1 onion chopped
  • 1 egg
  • buttermilk to make batter

Mix all of the ingredients together, adding enough buttermilk to make the right thickness of batter. Place the batter into the refrigerator to set for about an hour. Don't stir the batter. Drop by the spoonfuls into hot grease to deep fry.

White Onions for Hush Puppies

*I prefer the buttermilk methods for making hush puppies from scratch the best. I do use equal amounts of green onion and white onion. The combination gives the best taste.
