How to Make Mexican Lasagna
If you agree with Garfield the cat that lasagna is from heaven, then you will adore this Mexican version of the cheesy and delicious dinnertime favorite. Quick and easy to prepare, this one-dish casserole can be assembled ahead of time and refrigerated until ready to bake.
Things You Will Need
1 1/2 lbs. ground beef1 package taco seasoning mix
1 tsp. seasoned salt
1 cup diced tomatoes
1 small can diced green chiles
16 oz. can tomato sauce
1 cup ricotta cheese
10 oz. grated Monterey Jack cheese
8 oz. grated cheddar cheese
2 beaten eggs
10 corn tortillas
Step 1
Brown beef in a large skillet and drain fat. Add the taco seasoning mix, seasoned salt, diced tomatoes, tomato sauce, and chiles. Bring to a boil. Reduce heat and simmer for 5-10 minutes.Step 2
Combine eggs and ricotta cheese in a small bowl. Step 3
Spread one half of the meat mixture in the bottom of a 13 x 9 x 2 baking dish. Place one half of the tortillas on top of meat. Spread one half of the ricotta cheese mixture over the tortillas. Top with the 10 ounces of Monterey Jack cheese.Step 4
Repeat layers ending with the 8 ounces of cheddar cheese.Step 5
Bake, uncovered, in a 350 degree oven for 20-30 minutes or until cheese is melted and bubbly.Step 6
