How to Make Pecan Cookies
Here is a wonderful recipe for peacan cookies. You make these cookies into a ball before you bake them. They are a delicate cookie and great for the christmas season. Your family will go crazy for these cookies and have been a family favorite in my family for well over 50 years. This recipe was handed down from my grandmother who was a baker by trade.
Things You Will Need
Ingredients
1. 1/2 cup soft butter
2. 1 teaspoon vanilla
3. 1 cup chopped pecans
4. 2 tablespoons sugar
5. 1 cup cake flour
To make cake flour take out 1 tablespoon of the flour in your one cup of flour and add in 1 tablespoon cornstarch.
Step 1
Soften the butter. Don't do this in the microwave because then you will have melted butter, soften you butter at room temperature. Using a mixer cream the butter, vanilla, and sugar until well mixed. Mix in the flour. Using a spoon or spatula fold in the pecans. If you use a mixer when adding the pecans, you will chop up the pecans to small so don't use a mixer on this step. Roll the cookie dough into small balls about an inch and a half in size. Place on ungreased cookie sheet, bake at 350 degrees for 10 to 12 minutes. These cookies don't get very brown so don't over cook them. They will get slightly brown on the bottom of the cookie. While the cookie is hot roll them in powdered sugar. Be very careful with this step as these cookies are very delicate and will break apart if handled to roughly.
These are my family's favorite Christmas cookie, and is one of the many cookies I make at Christmas time. I usually double the batch because they eat them as quick as I bake them. For a variation you could use walnuts instead of the pecans.
