At the same time, we look forward to sitting down to a nutritious and delicious meal at dinnertime. These quick and easy bacon wrapped chicken roll-ups may just fit the bill!

Things You Will Need

6 Skinless boneless chicken breasts
1Pkg. 8 oz. cream cheese softened
2 tsp. snipped chives
1/4 tsp. pepper
1 package of bacon
2 tsp. melted butter
1/4 Cup breadcrumbs
1/4 tsp. paprika

Step 1

Preheat oven to 375 degrees.

Step 2

Pound chicken to 1/2 inch thickness between two pieces of plastic wrap.

Step 3

Spread cream cheese on chicken. Make it as thin or thick as you like. Top with chives. Roll up to enclose filling.

Step 4

Sprinkle with pepper and wrap with bacon. Some people may use one slice, others may go for the gusto and use up to 3-4 pieces of bacon per chicken roll-up.

Step 5

Place rolls serve side down in baking dish. Bake for 35 minutes.

Step 6

In a small bowl, mix butter and breadcrumbs.

Step 7

Sprinkle with breadcrumb mixture and paprika and you're all set!Preheat broiler. Broil the chicken roll-ups 3 minutes on each side to crisp bacon. Remove from oven and sprinkle with breadcrumb mixture and paprika.

Served with a baked potato or rice, green beans, and a salad, these bacon-wrapped chicken roll-ups are sure to become a family favorite!

Tips & Warnings

Do not walk away from the oven during step 7. You want crisp bacon, but not overly done.
