Fresh Vegetable Tray
Making your own ranch-style dressing mix, is easy to make and tastes much fresher than the store bought kind. Make the mix with the following ingredients and keep on hand to use for salads, fresh vegetables, baked potatoes, steamed vegetables, even does great for stir fry vegetables seasoning.
1-1/2 tablespoons dried parsley
1- tablespoon salt
1/2-tablespoon dried chives
1/4-tablespoon dried oregano
1/4-tablespoon dried tarragon
1/2-tablespoon garlic powder
1/2-tablespoon lemon pepper
In a medium bowl, combine all the above. Blend well.
Store in an airtight container.
To Make Ranch-Style Dressing:
1-tablespoon of the ranch-style mix.
Combine all in a large bowl and whisk together well.
Refrigerate at least one hour before serving.
To Make Ranch-Style Dip:
2-tablespoons of the ranch-style mix
1-cup mayonnaise or low-fat mayonnaise
1-cup sour cream or low-fat yogurt
Combine all in a large bowl, blend well. Refrigerate
about 2 hours before serving.
To Make Twice Bake Potatoes:
Bake potatoes until done. Cool just until easy to handle.
Cut off a section of the top, scoop out. Mash with a potato
masher or electric mixer.
Whip in just enough ranch-style dressing to make creamy.
Refill the shell and return to oven until heated through, remove from oven, sprinkle on some chopped chives, bacon bits or fresh grated Parmesan cheese.
Twice Baked Potatoes
Tip; steamed chopped broccoli or zucchini works well in these twice baked potatoes.
