Snow on the mountain cookies aren't just pretty to look at they are wonderful to eat.

Ingredients:
2-cups granulated sugar
4-large eggs
2-teaspoons vanilla extract
8-tablespoons butter, melted
2-1/2- cups all-purpose flour
1/2-cup plus 1-tablespoon unsweetened cocoa
2-teaspoons baking powder
1/2-teaspoon salt
1-cup chopped pecans
1-1/4 cups confectioner's sugar

Step 1...
Combine sugar, eggs, and vanilla in a large bowl. Beat with electric mixer on high, until well blended.
Add the butter and mix well.

Step 2...
Sift the flour, cocoa, baking powder and salt.
Add to the sugar mixture and mix well. Stir in the pecans.
Cover and chill, until dough is firm. About 2 hours.

Step 3...Preheat oven to 350 degrees.

Step 4...
Shape the dough into 1-inch balls. Roll in confectioners' sugar. Arrange 2-inches apart on baking sheets.
Bake until browned, about 10 minutes. Do not over bake; cookies should be chewy.

Makes 4 to 5 dozen cookies

Tip:
Use real butter for these cookies. Margarine works, but for a chewy texture and a melt in you mouth cookie, butter works best.

I've been making these cookies without the pecans. When I got the recipe it was called San Andreas Fault cookies because of the cracks in the powdered sugar. I know how great they taste! Thanks for sharing your recipe!

I used to make a similar cookie, called chocolate crinkle cookies. They are very good.
