Spinach-Cheese Triangles

Spinach-Cheese Triangles Recipe

1/2-cup minced white or yellow onion
2-tablespoons butter
1-package(10 ounces) frozen chopped
spinach, thawed and squeezed dry
1/2-cup parsley
2-tablespoons minced green onion
1/4-pound feta cheese, crumbled
2-eggs, beaten
1-package frozen puff pastry, thawed
1-egg beaten with 1 teaspoon water

Step 1...Cook and stir white onions in butter in a large skillet
over medium-high heat, unitl onions a transparent; remove from heat.
Add spinach, parsley, green onions, feta cheese and the 2 beaten eggs.
Mix until well blended.

Step 2...Unfold 1 pastry and roll out into a 15x15-inch square on a lightly
floured surface. Cut into 25- 3-inch squares. Repeat with remaining pastry.

Step 3...Place about 2-teaspoons of the spinach mixture in one corner
of each square, brush the edges with the egg-water mixture; fold
pastry over to form a triangle. Seal by pressing edges with a fork.
Brush the tops with the egg-water mixture.

Step 4...Bake in a 375 degree oven for 12 to 15 minutes.
Makes 50 spinach-cheese triangle appetizers.

These sound tasty. Some of the ingredients are similar to the Greek Spanikopita only it's with phyllo dough instead.

Sounds good, you need to post a recipe for Greek Spanikopita. Would really like to see it. I like using phyllo dough too.
