Tequila and Lime Roasted Chicken (21531)

How about Margaritas along with Tequila and Lime Roasted Chicken for dinner tonight? A delectable Mexican dish that can be grilled or oven-roasted. Use a good quality golden tequila and serve with--white and red--cold gazpacho soup, add peppers or cayenne to the sauce for extra hotness. This is for two servings, add accordingly to this recipe for a larger group.

Step 1

Blend marinade ingredients in a large plastic bag, add chicken, seal well. Refrigerate for 3 to 12 hours, shake up, occasionally. Optional: make a larger quantity of marinade and set aside for use in making sauce

Step 2

Prepare charcoal one hour before grilling or preheat oven to 350 degrees. Bake for 45 minutes or until golden brown. Internal temperature should reach 170 degrees F (77c).

Step 3

Prepare sauce, while chicken is baking. Add marinade, sugar and cornstarch to saucepan. Cook over medium low heat, stir slowly until it comes to a rolling boil and starts to thicken to a syrupy consistency. Carefully, taste test and add any needed condiments for flavor and heat.

Step 4

Arrange finished chicken on platter with lime slices and cilantro leaves as garnish. Drizzle sauce over chicken, have one or two decorative dishes with extra sauce for dipping.
