A great recipe for using the zucchini and potatoes that you can grow in your own garden. Quick easy side dish for any meal.

Zucchini Baked Potatoes

Things You Will Need

4- medium baking potatoes
1/2- cup ranch style dressing
2-small zucchini, sliced or diced
8 tablespoons butter
1- clove garlic, minced
1/8-teaspoon black pepper
1/4-teaspoon paprika
1/2-cup grated Parmesan cheese

Step 1

Preheat oven to 425 degrees and bake the potatoes until tender, about 1 hour. Cool.

Step 2

Cut the potatoes in half lengthwise. Scoop the pulp into a large bowl, reserving the shells. Add the ranch style dressing and mash the potatoes until smooth.

Step 3

Melt the butter in a large skillet over medium-high heat and saute the zucchini and garlic until tender. Should take about 5 minutes.

Step 4

Add the zucchini mixture to the potato mixture and blend well. Stir in the black pepper and Parmesan cheese. Spoon mixture into the reserved potato shells. Arrange on a baking sheet, sprinkle with paprika. Bake for 10 minutes.
Serves 8.
Can add cooked diced ham or bacon.
