Gather the ingredients to make a Lemon Jell-O Cake:

1 small package lemon Jell-O
1 yellow or lemon cake mix
2/3 cup vegetable oil
4 eggs

Let's Cook!

Lemon Jell-O Gelatin Dessert

Dissolve the small package of Jell-O in 1 cup of boiling water, and allow time for it to COOL.

Empty the cake mix into a large mixing bowl.

Pour in the cooled Jell-O and the vegetable oil, and using a mixer, mix the ingredients together.

Next, add the eggs, one at a time, and beat after each one is added.

Add the lemon extract.

Beat until well mixed.

Pour the batter into a well greased and floured 10-inch tube or bundt pan.

Bake in a preheated 350-degree oven for 45-50 minutes or until the cake tests done. Leave it in the pan to cool for approximately 15 minutes, and then remove it from the pan.

Bake this delicious dessert in a decorative Nordic Ware Platinum Collection Heritage Bundt Pan to make it look as spectacular as it tastes. Another plus - these pans are Made in the USA.

NOTE: "The easiest way to remove a cake from a tube pan is to place a plate on top of the pan, and holding the two together, turn them upside down. All you need to do, then, is to place your serving plate on the bottom of the cake, and once again, flip them over together. If you are using a bundt pan, then simply place your serving plate on top of the bundt pan, and turn them over together."[1]

In Closing

While the above recipes are made using a cake mix, I have some other dessert recipes that are easy to make from scratch. Three of the most popular are: Chocolate Sheet Cake, Pineapple Southern Pound Cake and 7 Up Pound Cake. And from my Easy Kid Recipes series, try the Chocolate Éclair Dessert recipe.

My favorite kinds of recipes are quick and easy to make, and of course, they must be delicious, and the two cake mix based recipes shared above fill that description perfectly. Try each of them, and you will see how delicious they both are. Your family can now choose whether they like the Lemon Jell-O Cake or the Lemon Pudding Cake best. Or perhaps, they will both become favorites.

I remember making jello cakes years ago. I think I made with strawberry flavor, thanks for the reminder of how good they are. Will have to retry soon.
