Summer Melon Salad is a light, tasty side dish. Not to mention healthy. Easy to prepare, just takes about 20 minutes and only about 85 calories per serving. I've also included the recipe for berry-honey dressing to top it off. Very cool summer time treat for the whole family.
Things You Will Need
1/2- of a cantaloupe
1/2- of a honeydew melon
1- pint fresh strawberries
lettuce, I like butter head, but you can use any lettuce you like
3/4- cup berry-honey dressing, optional
Step 1Prepare the the berry-honey dressing:
In a food processor or blender, process 1-3/4 cups strawberries, 3-tablespoons honey, 2 tablespoons lemon juice, 1 tablespoon olive oil and 1 teaspoon grated lemon rind. Be sure to process until smooth. Cover and refrigerate( will keep for about 1 week).
2 tablespoons about 29 calories.
Step 2While the dressing is chilling, peel and seed your half melons. Cut in thin wedges. Wash and cut the strawberries in half.
Arrange lettuce on salad plates, top with melon wedges and strawberries.
Drizzle 2 tablespoons of the berry-honey dressing on top.

Tips & Warnings
If you are going to store melon in refrigerator leave in the seeds, the seeds help keep the melon fruit moist.
