How to Make a Tomato Sandwich With a Twist

I always thought that there was nothing better than a tomato sandwich, especially when the tomatoes are right off the vine. That was before I discovered guacamole. I have made guacamole from scratch (slice up 2 avocadoes, salt, pepper, and a little lemon juice) but that was before it was available everywhere. I buy it in vacuum sealed bags. Just cut one corner of the bag if you don't plan to use it all at once. After you squeeze out what you need, store it a zip lock bag.


Things You Will Need

  • 2 Slices of whole grain bread
  • 1 Tbls. Guacamole
  • 1 Tbls. Mayonnaise
  • 1 small tomato
  • salt and pepper

  • Step 1

    Toast the bread.

    Step 2

    Slice the tomato into three or four thick slices.

    Step 3

    Spread the Mayo. on one slice of bread the layer the tomato slices and salt and pepper.

    Step 4

    Spread the guacamole on the other slice and dig in. It looks like a Christmas sandwich.
    Guacamole is very filling. Normally I need a mid afternoon snack but after this sandwich I can usually make it until dinner. Enjoy!!
