So, I save time since I do not have to cook it, and at that price, this meat is a real bargain. Or, if you prefer, you can cook four large breasts to use in this recipe, and be sure to save the broth.

3 stalks celery, sliced diagonally

1 large onion, chopped

4 medium carrots, sliced diagonally

1 1/2 cups water or broth

4 cups poultry, cooked and chopped

broth from the rotisserie container

1 can Cream of Mushroom soup

½ can of milk

salt and pepper to taste

1 1/3 cups Bisquick baking mix

6 Tbsp. milk

Slice 3 stalks of celery diagonally, about ¼ inch thick.

Chop 1 medium size onion.

Slice 4 medium size carrots diagonally, about ¼ inch thick.

Place the celery, onions, carrots, and water or broth in a 5-quart Dutch oven, and cook for about 10 minutes.

Chop the cooked Rotisserie chicken into bite size pieces, and add it to the celery, onions, and carrots already in the pan. Be sure to rinse out the rotisserie container, with a little water, to get out all the drippings. If necessary, add a little more water or broth to make sure you have enough liquid in the pan to just cover the ingredients.

Stir in the can of Cream of Mushroom soup, 1/2 can of milk, and stir until well blended.

Add salt and pepper to your taste, and cook over low heat while making the biscuit dumplings.

Make the dumplings using Bisquick baking mix. Double the recipe on the side of the box, or make your own biscuits style dumplings using a favorite recipe. Divide the dough into 8 equal servings.

Stir the creamy mixture before dropping the biscuits onto the top of the simmering meat and vegetables. Reduce the heat, cover the pan, and cook for 15 to 20 minutes. Test the biscuits for doneness. If necessary, cover and cook for a few more minutes.
