Key Lime Pie

How to Make an Easy Key Lime Pie
Why buy a Key Lime Pie at the store or bakery when you can easily make one fresh right in your own kitchen. Then you can say, "I did this".

First off get your ingredients ready.

1- package lime flavored gelatin

1- cup boiling water

1 to 2 -teaspoons grated lime rind

1/2 -cup real lime juice

1- egg yolk, well beaten

1-1/3 -cups sweetened condensed milk(14oz. can)

1- egg white, room temperature

Few drops of green food coloring, optional

1- baked 9 inch pastry pie shell, cooked and cooled

Step 1..Dissolve the flavored gelatin in boiling water. Add the lime rind and lime juice.

Step 2..Slowly pour step 1 into the beaten egg yolk, stirring constantly. Add the sweetened condensed milk, blend well and chill until slightly thickened.

Step 3..While step 2 is thickening, beat the egg white until soft peak form. Fold this into the thickened gelatin mixture, add food coloring, if desired, pour into the prepared pie shell. Chill until firm,about 3 hours.

Serves 8

Tips: Garnish with lime slices and whip topping.
