The Best Roast Beef Recipe
How to make the best roast beef starts with buying good meat. My local Whole Foods store has had the bottom round cut on sale for the past two weeks. So, we have been enjoying their best roast beef in several different ways. I purchased a larger piece of bottom round this week, in order to cook once and to eat multiple meals from this one piece of meat. I am feeding a family of three adults; so, you may need to modify the ingredients according to your family’s size.

Gather the ingredients to make the best roast beef dinner #1.
3 ½ lbs. bottom round cut
3 cups water
1 envelope Lipton’s Dried Onion Soup Mix
1 large sweet onion, quartered and sliced
Place the bottom round into a five-quart Dutch oven.
Pour in the water.
Stir in the envelope of dried onion soup.
Prepare the onion, and add it to the other ingredients in the Dutch oven.
Bake in a preheated 350-degree oven, and cook it for three hours (for well done). You might want to vary the cooking time based on how well done you like it.
To serve the best roast beef dinner #1, remove the meat from the Dutch oven, and slice off the amount you will be serving for dinner. After slicing, place the slices back into the pan, into the broth, so it will stay moist.
When you plate up dinner, spoon a little broth and onions, from the pan, on the meat. Mashed potatoes are a ‘must have’ with this meal, so make a little pocket in the mashed potatoes, and fill it with broth and onions, too. Add another favorite vegetable, and dinner is ready.
Store the leftover meat and broth in separate containers in the refrigerator.

2 slices of pepper jack cheese for each sandwich
2 slices of rye and pumpernickel bread for each sandwich
butter or margarine
Slice off enough of the best roast beef to make the number of sandwiches you need to feed your family. These sandwiches are quite filling, so I just make one per person. But they are so good; you may have a request for another sandwich.
Measure enough broth and onions; figure about ½ cup for each person, and place it in a saucepan to heat.
Melt the butter or margarine, and brush it on one side of a slice of bread. Place the buttered side of the bread down in a 10-inch sauté pan. Place the pepper jack cheese on the bread (non buttered side) and the slices of meat on top of the cheese. Top off the sandwich with the other slice of bread, and brush it with the melted butter. Heat the sandwiches over medium/low heat until the cheese is melted, and the bread is beginning to brown and get crispy. Make sure to turn them over, as they heat, so they will not burn on one side. To serve the best roast beef sandwiches au jus, ladle the broth, with onions, into individual small, deep bowls. (I used small coffee cups.) Place the sandwich on your plate, and cut it in strips to be dunked into the au jus. Add your favorite side dishes, and call the family to the table.

Place some leftover broth in a small fry pan; a 9-inch size is good. Heat the broth. Make a thickening agent (flour and water), and stir it into the broth to make gravy. Serve over bread; some people like their bread toasted, and others prefer it not be toasted. Add a serving of mashed potatoes on the side.
