Recipe for Making the Perfect Gnocchi
Making the perfect Gnocchi requires two things. Firstly perfectly home made Gnocchi and secondly it requires a delicious sauce to go with it. In this easy and delicious recipe guide to making Gnocchi, I will suggest two alternate sauces. The first is pesto sauce for Gnocchi and the second is a tomato based sauce.
How to make a Pesto Sauce for Gnocchi
This sauce is easy to make and requires
60g fresh basil leaves
30g pine nuts
Juice of half a lemon
50g grated Parmesan cheese
4 tablespoons of extra virgin olive oil
Salt and pepper
Extra virgin oil should be used-not cheaper- because this oil is for eating. The pine nuts should be good quality from somewhere like Italy or Lebanon. Firstly chop up the basil and pine nuts and then grind together using a pestle and mortar. Aggressively mix them together after adding salt and pepper. Then stir in the oil until the mixture is thick. Stir in the lemon juice. Cover for twenty minutes and Voila!
Tomato sauce for Gnocchi
This sauce is also easy and requires
Lightly fry the onion until they are translucent. Add the passata and gently heat for twenty minutes after adding basil, oregano, capers and olives. Keep heating for a further ten minutes and then immediately after taking off the heat, throw in the anchovies. Be careful with anchovies as they can disintegrate quickly and you could lose the flavour.
How to Make the Perfect Gnocchi
200g plain flour
Salt and pepper
Boil the potatoes for 20 minutes or until they are soft. Darin them very well and heat them over a stove so they are completely dry Mash them very well then mix in the flour, egg, salt and pepper. Form the mixture into solid dough.
After leaving to rest for 10 minutes, roll out the Gnocchi into small elongated balls. Press a fork onto the tops so that the Gnocchi acquires tracts. Then boil the Gnocchi for 5minutes or until they rise to the surface.
Eat with the sauce.
