Many of us enjoy the beef and broccoli dish from the Chinese restaurant but have a problem with keeping the broccoli nice and crisp when trying to make it ourselves at home. Preventing the garlic from burning is another complaint often heard. This recipe for the delicious dish will show you how to serve it with crisp broccoli and the perfect time to add the garlic to prevent scorching.
Things You Will Need2 cups of white rice (prepared according to the package directions)
1 pound of sirloin or flank steak ( sliced thinly across the grain into strips)
2 tablespoons of peanut oil
2 cups of broccoli florets
1 clove of garlic ( finely minced or crushed)
2 tablespoons of soy sauce
2 teaspoons of packaged Chinese 5-Spice
1/2 cup of hot water
2 teaspoons of corn starch with 1 teaspoon of water (mixed well)
1 small finely diced onion
1/2 teaspoon of finely grated ginger
1 red bell pepper (thinly sliced into strips)
Step 1First prepare the white rice according to the directions on the package. Set this aside when it is finished and keep the lid on the pan.
Step 2Place the broccoli in a large bowl. Cover the broccoli with boiling hot water. Allow this to steep for 5 minutes. Drain the hot water from the bowl and run cold water over the broccoli in order to stop the cooking of it. Set this aside. You will notice the broccoli still has its bright green color and it's texture is crisp. It is perfectly cooked.
Step 3In a large skillet heat the peanut oil on medium to high heat. Add the strips of steak and pour the soy sauce over the meat. Also sprinkle the 5-spice mix onto the strips of meat. Add the garlic and the ginger to the pan as well. Stir this around in the skillet as to saute the meat for 3 to 4 minutes. Remove the meat from the skillet and set aside.
Step 4Now add the onion and red pepper to the hot skillet and saute. Continue stirring the onion and red pepper for about 3 minutes. Put the meat strips back into the pan with the saute onion and red pepper. Add a half cup of hot water and heat to a simmering point. In a small cup mix the corn starch and the teaspoon of water. Add this to the meat in the skillet. Stir until it has thickened slightly.
Step 5Now add the broccoli florets to the mixture in the skillet. Toss all of the ingredients around well and remove from the burner. Serve this over the white rice. If you like, garnish each dish with thinly sliced scallions.
