Simple Slow Cooked Pork Ribs

This is a simple to cook dish with minimal ingredients. It is slow cooked in the oven. The beauty of this recipe is it can be used with multiple cuts of meat, and it can cook for longer than the recommended time without ruining the dish. I like to cook this on the weekends when we're putting around the house, but don't want to get fancy with dinner. 



1 1/2 pounds  pork back ribs*

2                     small onions

2                     green bell or poblano** peppers

1 tbsp             garlic

1 tbsp             olive oil

1 cup              barbeque sauce

3 tbsp             honey

Salt and Pepper to taste


*I used back ribs for this article, but any inexpensive cut of meat will suffice. The beauty of slow cooking is you can take a tough slab of meat and turn in into a succulent, tender dish! 

**Poblanos are slightly spicy.


Preheat oven to 250 degrees.

For easy clean up, line round casserole dish with aluminum foil. 

Roughly chop onions and peppers. Toss in casserole dish with olive oil.

Place pork ribs on top of onions and peppers. 

In a small dish, combine garlic, barbeque sauce (I used Stubb's smokey mesquite), and honey. Wisk.

Pour sauce mixture over ribs and veggies. 

Place lid on casserole dish and cook in preheated oven for 3 hours.


Enjoy! You can serve these ribs on their own, with mash potatoes, or even a side salad.
