How to make Enchiladas

How to make some super easy enchiladas!

Things You Will Need

One package of CORN tortillas I usually get the 20 pack

Vegetable oil

Hamburger about 2 lbs


11x9 Casserole dish

Pam spray or the equivelant

Taco Seasoning mix

two cans of enchilada sauce mix( you can buy the green chile kind, the hot kind or the mild kind) Whatever you like best.

1/2 chopped onion

2 C shredded Cheddar cheese or the mexican Blend Cheese whatever you prefer

Paper towels, Fork or tongs Plate or something to put hot tortillas on

Step 1


First take your skillet and put in enough oil to cover the bottom plus a little more, enough to cover a tortilla

Heat up the oil under low low heat, we don't want to FRY the tortillas only soften them up

Dip each tortilla in the warm oil until the tortilla is tender but not cooked and crispy

use your tongs or fork to put each dipped tortilla on a plate

this goes by pretty quick so dip, then lay on a plate the oil will accumulate on the bottom of the plate you are keeping them on so you can always drain it back into your skillet

Step 2

When you get through softening your corn tortillas in the oil turn the oil off . Take a skillet and brown the hamburger and the onions together . When the meat is done, drain all the fat off of it.

let the meat cool. It is easier to handle this way.

When the meat cools , spray the bottom of your baking dish with pam, and pour one can of the enchilada sauce into the casserole dish and spread it out evenly.

I usually get a plate and take one of the corn tortillas and put some filling in it and roll it from one end to the other and lay it in the casserole dish, i repeat this until all of the meat is gone or the tortillas whichever happens first. Continue to lay them into the casserole dish you can put them right next to each other. If you prefer you can add a little cheese to them or you can just put meat in them , If you want cheese only you can do that too, just don't brown any meat.


Step 3

Pour another can of enchilada sauce on the top of the enchiladas and place them in a preheated oven 350 degrees for about 20 minutes. Sprinkle about 2 cups of cheese on top and then leave in the oven until cheese is melted. This way the cheese does not get brown and yucky!


A great side dish to this is spanish rice, make your own or a mix like Rice a roni or anything like that will be great. Enjoy these enchiladas! My kids and hubby love them.!

The tortillas will be HOT be careful !
