Imagine sitting down to a delicious, high-quality Italian meal...without leaving the house! Parmesan Chicken is a tasty, relatively easy dish to make. I've been making it for a few years, and it is officially my husband's favorite homemade dinner. Everyone who's tried it loves this dish. So, I'm here to share with you my top go-to recipe, with side recipes for an entire meal included!

Parmesan Chicken Recipe

You will need:
4 chicken breasts
2 eggs (optional)
1/2 - 1 cup flour
salt and pepper to taste
1 tsp oregano
1 tsp basil
1 large jar of meat-flavored spaghetti sauce
1 - 1 1/2 cup grated mozzarella cheese
1/4 cup parmesan cheese
oil for frying

1. Heat about 1/4-inch oil in a large frying skillet on medium.

2. While oil is heating, cut all fat from the chicken. Pound meat down to 1/4-inch thick (I use a hammer, but any blunt object would work).

3. Optional step: If using eggs, beat them together in a shallow dish. Dip each chicken breast in egg mixture.

4. Place flour, salt and pepper, basil and oregano in a large ziploc bag. Shake to mix. Add chicken breasts to bag, one at a time, and shake until well coated with flour mixture.

5. Fry chicken, turning once, until each breast is golden-brown on both sides.

6. While the first batch is frying, pour entire jar of spaghetti sauce into a deep 9 x 13 baking pan. Arrange chicken on sauce. Sprinkle the chicken and sauce with both cheeses. Cover pan and bake at 400 degrees for 10-15 minutes, until cheese is bubbly and starting to turn golden.

7. Remove from oven and serve over fettucine noodles with grilled asparagus or candied carrots and garlic bread.

And now, as promised, the side recipes!

The Best Grilled Asparagus

You will need:
1 bunch asparagus
olive oil
salt and pepper

Rinse asparagus in cold water. For each vegetable, lightly hold both ends and bend it until it snaps naturally somewhere in the middle. Discard the botttom end, which has a wood-like texture. Place the top end on a 9 x 13 baking sheet. Repeat for the while bunch. Lightly drizzle olive oil over asparagus, then use your hands to mix it all together so each shoot is oiled. Spread out on pan. Sprinkle with salt and pepper, and bake at 400 degrees for 9 minutes. Remove and serve!

Candied Carrots

You will need:
1/2 pound baby carrots
2 tablespoons soft butter
2 tablespoons brown sugar

Steam carrots until soft when poked with a fork, it takes about 30 minutes. Place in a serving dish and add butter and brown sugar. Cover. Just before serving, mix the now-melted butter and sugar into the carrots.

Easy Garlic Bread

You will need:
slices of french or sandwich bread
softened butter
garlic salt*

Butter one side of each slice of bread. Arrange on a baking sheet, butter side up. Lightly sprinkle with garlic salt. Broil for 1-3 minutes, until the top of the bread starts turning a golden-brown. Remove and serve immediately!

*if you don't have garlic salt, use garlic powder and dried parsley instead.

And there you have it! An entire italian meal for your family dinner. Enjoy!
