How to make basic vanilla cupcakes
How many times have you been stuck trying to think of quick and easy dessert ideas? This basic vanilla cupcake recipe is a handy tool in the kitchen. Quick and easy, it can used many times over. Spice it up with a few teaspoons of cinnamon, mix in some chocolate chunks and chopped up strawberries, or simply ice it with a easy lemon frosting - the variations are endless! Enjoyed by young and old, cupcakes make the perfect treat after any meal.
Things You Will Need
115g margarine (or butter)1/2 cup white sugar
2 eggs
1 1/4 cups SR flour
1/4 cup milk
1/4 tsp bi-carb soda
1/4 tsp vanilla essence

Step 1
Cream the margarine and sugar by hand. Stir in eggs.Step 2
Mix in the flour and milk alternatively, and stir in the bi-carb soda and vanilla.Step 3
Pour into a cupcake pan lined with patty cases. Fill each about three quarters full - they will rise.Step 4
Bake in a pre-heated fan-forced oven at 180 degrees celcius for approx. 30 minutes. Makes around 15 cupcakes.This is a great recipe to practice your cake-decorating skills. Mix together a spoonful of margarine with a cup of icing sugar - add food colorings and flavorings. Have fun!
