A can of corned beef is a very versatile item of food to have handy. Usually a single can is about 340 grams in weight. There is enough beef in single a can to make about two to three adult servings. Most corn beef brands have a different salt content in their formulas. I have tried more than nine different brands over a twenty year period and I find the HEREFORD corn beef has the least in salt content. However, it tends to be the most expensive of the lot selling for as much as 2.99$ CA per can.

Things You Will Need

1 tin of corn beef (340 grams)

2 teaspoons cooking oil

1 med to large onion

1 med to large tomato

2 teaspoon ground black pepper

1/2 teaspoon salt or salt to taste

4 tablespoons of tomato ketchup (important ingredient)

1 cup of water

Optional ……2 cups of white rice

Step 1

Firstly, if you're going to make white rice you should start it before the corn beef. The best way to make rice is in a rice cooker. However, traditional methods of making rice will do just fine in this case. You could easily make mashed potatoes or even add cubes of potatoes if you like. For the grand slam; you could boil some sliced cabbage and add to the corn beef sutsituting the 1 cup of water for 1 cup of the boiled cabbage water. But, for the purpose of simplicity and speed ………. 2 cups of rice with this corn beef recipe will be the right amount for about two to three maybe four people.

Step 2

Dice or slice the onion to your preferred size. In a 10 inch pan add the 2 teaspoons of oil and sauté the onions until golden brown or translucent. Remove corn beef from the can and add into the onions. Use a fork to incorporate beef with the onions. Add the salt. Add the ground black pepper. Add 1 cup of water. Add 4 heaping tablespoons of ketchup (Heinz if possible). Dice up the tomato and add as well. Increase your heat to a med high in order to bring mixture to a boil.

Let Boil on med- high heat for about ten minutes . Mix occasionaly and taste using a small spoon to see if you want more spices. Then, allow cornbeef to simmer on med -low heat for about fifteen minutes, reduce to low heat until your ready to serve. ...and enjoy.
