How to make the perfect Italian meatloaf

This is a meal for a special occasion as it requires some time in the kitchen. As it is a delicious meal that will impress your family or guests, it is time well spent.

Things You Will Need

500 gr. ground beef - 75 gr. ham - 1 egg - 2 boiled eggs - 1 tablespoon flour - 2 tablespoons breadcrumbs - 1 onion - 1 small carrot - 1 stalk celery - 2 sprigs parsley - 30 gr butter - 2 tablespoons olive oil - a pinch of nutmeg - salt and pepper. For the tomato sauce you need: 750 gr. ripe tomatoes - 1 / 2 onion - 1 stalk of celery - 2 sprigs parsley - 25 gr. ham - 1 / 2 tablespoon flour - 1 / 2 clove of garlic - a few leaves of basil - a pinch of sugar - 4 tbsps of olive oil - salt and pepper.

Step 1

Place the ground beef add the diced ham, season with salt and pepper, nutmeg and add the egg yolk stir until all the ingredients have mixed well together. Once done, flatten the mixture, place two boiled eggs in its middle, and rolling the mixture in the shape of salami, fold it over itself so that the eggs remain well covered inside.

Step 2

Now roll the meatloaf in the egg white and then in the flour and breadcrumbs until it is nicely covered. Place the meatloaf in a buttered baking pan with a small chopped onion, a carrot, one celery, and a bit of parsley, drizzle with oil and melted butter and place in the oven at 180 degrees, occasionally basting the meatloaf with its own sauce, and turning it to ensure it is cooked on all sides. The cooking time is approximately 60 minutes.

Step 3

Put some oil in a saucepan with the chopped onion, celery and parsley. As soon as the vegetables begin to become brown add the chopped ham, let it become a bit brown, then sprinkle the mixture with some flour and allow it to toast slightly while stirring for a few minutes. Add the chopped tomatoes, garlic, basil, salt, pepper and sugar and let everything cook for about an hour. Occasionally stir and mash the tomatoes to make a better sauce. Then let if cool a bit, blend it, put it back on the stove over medium heat to absorb all the liquid for another half an hour. When the meatloaf is ready you can cover it with most of the tomato sauce, pour the remaining tomato sauce in a gravy dish. Serve with the vegetables of your choice.

Tips & Warnings

You can add a few tablespoons of olive oil to the tomato sauce when it is ready. You should start with tomato sauce first as it takes longer
