Recipe for juicy baked pork chops -

Everyone loves pork chops. Pork chops are an inexpensive meat entrée, but sometimes difficult to cook and retain the natural juices of the pork. This recipe for 2 mouth-watering, juicy baked pork chops will solve that problem.

What you will need for this recipe:

2 1.5-inch thick loin pork chops with the bone attached
1/2 cup of white breadcrumbs, soft and minced
1 tsp of rosemary leaves, fresh parsley minced
1/4 tsp salt
Black pepper to taste
1 egg, beaten in a flat dish
Olive oil
Frying or sauté pan
Shallow baking dish

On a piece of wax paper or plate, mix the bread crumbs with the seasonings. Dip the pork chops in the beaten egg. Then coat the chops completely with the bead crumb mixture. Place breaded pork chops in a shallow baking pan and refrigerate at least an hour. This recipe can be prepared the morning before and refrigerated up to 8 hours.

Set oven temperature to 400º.

When you are ready to cook the pork chops, coat the bottom of a frying pan with olive oil and heat to medium temperature on top of the stove. Sear the pork chops on both sides about two minutes or until slightly browned. Remove the pork chops to the shallow baking dish.

Don't wash the frying pan, use it for an apple and onion condiment, recipe follows.

Bake the pork chops on the middle rack of the oven for approximately 25 minutes.

Serve with the apple and onion condiment, recipe below.

Wash two apples and slice into wedges, removing the core, but not the skin.
Slice a small onion into thin rings. In the frying pan and drippings from the browned pork chops, cook the apples and onions with a 1/2 tsp cinnamon sprinkled on the apples. You may have to add just a little more olive oil to the pan. Plate along side the juicy baked pork chops with steamed broccoli or fresh green salad.

Voilà! Juicy baked pork chops that won't have you reaching for the water or the wine with every bite.
