Regardless if you have greenhouseor garden lettuce, you want to keep it fresh for as long as possible. It is one of those vegetables that needs to be crisp in order to enjoy it in a salad or on a sandwich. Nobody goes out purposefully looking for a nice soft head-of-lettuce, of course not! Everyone wants a firm, crisp salad or leaf on their sandwich and they want to keep it that way because after a while it gets really expensive when you have to throw away food that you just have not gotten a chance to eat. With todays' rising prices especially for food, who can really afford to be buying fresh produce and then just tossing it in the garbage a few days later. There is a way to keep head type lettuce fresh longer or revive lettuce that is wilting.
Paper Towel Can Keep it Crisp
Remove any yellowed, wilted and bruised leaves.
Wet a sheet of paper towel.
Place the wet paper towel into a large zippered plastic bag with the head-of-lettuce.
Zip the bag tightly closed and store in the refrigerator. The moisture from the wet paper towel will keep your lettuce fresher and crisp longer.
How To Store
Lay out 2 to 3 sheets of newspaper, mist the newspaper with plain cold water.
Tightly wrap the head-of-lettuce with the damp newspaper.
Place the lettuce in a plastic bag in the refrigerator. Only use black and white newspaper. Do not use shiny newspaper.
Leave the outside leaves in place to protect the lettuce from the possibility of transferring newspaper ink. Wrapping a head in newspaper will retain its moisture and keep it crispy and fresh.
Remove all yellow, wilted and bruised lettuce leaves, cut the hard stem off.
Place the rest of the lettuce in a large bowl.
Cover tit with very cold water.
Allow the lettuce to soak in the cold water for approximately 45 minutes to an hour.
Remove the head-of-lettuce from the water and place it in a large zippered plastic bag, zip the bag closed and store in the refrigerator.
In an hour or 2 your lettuce will be crunchy, crisp, refreshed and revived.
Lettuce contains a lot of water and by keeping your lettuce in a cold moist environment, you are helping the lettuce retain its moisture.
Food is very expensive, don't waste it.
