* 35 Vanilla wafers that are finely crushed (1 1/2 Cups after they have been crushed)
* 1 Cup of sugar that has been divided
* 1/2 Stick of butter that has been melted (Will make 1/4 cup once melted)
* 1 Teaspoon of grated lemon peel
* 2 Eggs
* 1/4 Cup of lemon juice
* 2 Teaspoon of flour
* 1/2 Teaspoon of baking powder
* 1/4 Teaspoon of salt
* 1/2 Cup of flaked coconut
This recipe will make 20 lemon coconut squares.
Press this mixture into an 8 inch baking pan.
Bake in the oven for 8 minutes.
Add the lemon juice, flour, baking powder and salt and mix it together well.
Pour this over the crust and sprinkle the top with coconut.
Cover and refrigerate for about 4 hours, or until it has chilled well.
The lemon coconut squares may not be cut and served or wrapped for gift giving purposes.
Any leftovers should be stored in an airtight container and placed in the refrigerator.
