Pesto Green Eggs and Ham

For those of us on low carb diets, we are always looking for tasty alternatives to the regular every day boring foods. I have a tendency to flavor everything with the same condiments for weeks on end and wind up finding all sorts of awesome food combos.

In this article, I will teach you how to make a delicious scrambled egg medley.

Things You Will Need

2-3 eggs
1 Tablespoon Pesto

25g low fat diced deli ham
Non Stick Frying pan
Fresh ground pepper

Step 1

Once you've got all your ingredients, pre heat your stove to about 2/3rds heat.

Step 2

Crack your eggs into a mixing bowl and whisk them until they are well mixed. Then mix in the deli ham.

Step 3

Pour the eggs and ham into the frying pan and continuously stir until the mixture is about 95% cooked.

Step 4

Pesto Add your tablespoon of pesto to the eggs and ham and allow to heat up with the eggs while they finish cooking.

Step 5

Add fresh ground pepper to taste and enjoy!

A sprinkle of sea salt can also be delicious!

Tips & Warnings

Make sure to not over cook your eggs or they will get crusty and hard.
