It is really a breeze to make fluffy, sugar-dusted funnel cakes, just like at the county fair, only better.
What you'll need to make homemade funnel cakes;
1-1/4-cups all-purpose flour
2-tablespoons nonfat dry milk powder
1-tablespoon white granulated sugar
1-teaspoon baking powder
1-cup lemon-lime soft drink
vegetable oil for frying
Step 1...In a medium bowl, combine the flour, dry milk, granulated sugar, baking powder,
Step 2...Beat egg, lightly, and add the lemon-lime soft drink. Add to dry ingredients.
Beat until blended well.
Step 3...Heat about 1-inch vegetable oil in a large skillet over medium heat. When oil
is hot enough. Cover the end of the funnel with your finger, hold the funnel over the skillet
and pour about 1/4-cup of batter in the funnel.
Remove your finger from the funnel and beginning in the center of the skillet, release the batter
in a circular motion toward the outside of the skillet. (Don't give up, the first one may not look
perfect, but it is still going to taste great, you'll get better as you go along).
Fry for 1 minute and using the spatulas turn and fry for 1 minute more, or until golden brown
Step 4...Drain on paper towels. Sprinkle with confectioners sugar
Step 5...Repeat this for remaining batter.
Makes about 7 funnel cakes.
Tip; Don't give up if your first attempts just right, you'll get the gist
of it as you go along. They will still taste awesome no matter how they look.
Warning; Take great care with frying with hot oil.
